Tasting Notes: Caramel, dark chocolate, stone fruit

This is the third year we have sourced from Victor Robelo in the Matagalpa region of Nicaragua. This time we were excited to find an unusual varietal of coffee on offer.

Maragogype, also known as the 'Elephant bean' due to its size, is a natural mutation of the Typica varietal. Not commonly grown due to its lower yields and susceptibility to leaf rust, yet desired due to its higher natural sweetness.

We've roasted a little darker to caramelise the sugars, bringing out the chocolate and stewed fruit notes.

Victor has achieved Rainforest Alliance certification across his farms.

Las Nubes is a collection of seven farms sharing a washing station in the Matagalpa and Jinotega regions Nicaragua. Fertile soils, nestled amongst mountains and good rainfall make the region geographically perfect for growing speciality coffee.

Planet

The Farm is owned by Victor Robelo, he was born to a coffee farming family but they were forced to flee the family farms when he was a child, due to the civil war. He was able to return and buy back the farms in the early nineties. Victor has invested heavily into the farms to be able to produce excellent speciality coffees. Along side 25 hectares of coffee plants in production he protects a further 30 acres of virgin forest.

Flavour

The coffee is fully washed processed, then dried on raised beds.
