Tasting Notes: Whiskey, Orange and Cocoa nibs

Novembers guest is from a family-run coffee group in El Salvador called JASAL. They own many coffee farms in the region, where all coffee is shade-grown and then hand-picked. Our coffee comes from their main farm, ‘Los Nogales’.
Family-run for over 100 years, JASAL are specialists in experimental coffees and in producing and cultivating high-quality Arabicas.

This is a high scoring coffee (88) with an unusual character largely due to the processing method. We've opted for a medium roast profile to bring out it's boozy character and cocoa notes, maintaining it's orange like sweetness and acidity.

Los Nogales is the original farm of the Salaverria family and is where Jose Antonio Salaverria (owner) grew up. Los Nogales means ‘walnut tree’, being one of the many fruits they grew on the farm before coffee. The farm is made up of 4 plots of different varietals; the highest plot, ‘Miramar’, is where both Catuai and hybrid San Francisco varietals are grown.

Flavour

Anaerobic soaked is a complex processing method involving lots of steps to create its unique flavour profile. The ripe cherries are sealed in large tanks and fermented for 80 hours before being de-pulped to remove the fruit from the bean. The beans are then submerged in clean water in a soaking tank for a further 10 hours for a second anaerobic (without oxygen) fermentation, before being sun dried on raised beds and turned constantly for 12-15 days to achieve even drying.
