Tasting Notes: Grapefruit marmalade, caramel & cinnamon

Following Emily’s wonderful and inspiring trip to Timor-Leste last July, we have been building a closer relationship with KARST Organics and their farmer partners in Letefoho. This year we are delighted to secure a small amount of their beautiful, natural-processed coffee from the Rotutu farmer group led by Fransisco De Deus. 

With a light to medium roast profile, it's perfect for manual brewing, with tasting notes of grapefruit marmalade, a caramel sweetness and a touch of cinnamon.

People

Rotutu is a small group of farmers located high in the mountains of the Letefoho region. Since 2018, Kar-Yee and Stewart have worked closely with the group, sharing the goal of producing high-quality specialty coffee. They spend six months of each year alongside their partner farmers in Timor, providing hands-on support, expertise, and equipment to enable careful harvesting and processing. In recognition of this extra effort and commitment to quality, the farmers are paid a premium well above the commodity price, helping them to thrive in this remote region, their call home.

Planet

Coffee in Timor-Leste is naturally organic and shade-grown within the forest. Each family owns and cares for a section of forest, cultivating coffee alongside the surrounding ecosystem. Farmers who aim to produce higher-quality coffee use rehabilitation techniques such as careful pruning and natural organic fertilisers to improve yields and enhance fruit quality. Coffee is grown alongside other crops including fruit, vegetables, beans, and pulses, which help feed their families and can also be sold at the local market.

Flavour

Naturally processed coffee is where the fruit is rinsed and floated to remove detects, and then sun-dried on raised racks, turning regularly to ensure even drying. Once dried to the correct moisture level for export the fruit and parchment layers are removed in a hulling machine just before shipping. This extended contact with the fruit creates a smooth, sweet flavour.
A medium-light roast has been chosen to highlight these qualities, resulting in a delicate cup that works beautifully as a filter, Clever Dripper, or cafetière brew
